Bonus: the raw dressing means that prep is quick and easy, You will love this unique plant powered recipe!<\/p>\n<p>Source:\u00a0Amanda Hershberg, CPT,\u00a0Active Wellness Personal Trainer and Group Fitness Instructor<\/p>\n<p>Serves 4.<\/p>\n<p><strong>Ingredients<br \/>\n<\/strong><em>For the\u00a0Dressing<br \/>\n<\/em>2 tablespoons raw cashews<br \/>\n1 ea Juice of 1 fresh lime<br \/>\n2 tablespoons chopped onion<br \/>\n2 tablespoons chopped fresh cilantro<br \/>\n1 tablespoon maple syrup<br \/>\n1 peeled whole mandarin orange seedless<br \/>\n2 tablespoons rice vinegar<br \/>\n1 teaspoon chili pepper flakes more or less to taste<br \/>\n1 tablespoon fresh grated ginger more or less to taste<\/p>\n<p><em>For the\u00a0Salad<br \/>\n<\/em>1\u20442 ea Chopped Purple cabbage small size head of cabbage<br \/>\n4-5 cups fresh baby spinach<br \/>\n1 Cucumber sliced to matchsticks<br \/>\n1 Red pepper \u2013 diced<br \/>\n3\u20444 cup uncooked quinoa cook quinoa following directions on package<br \/>\n1 can garbanzo beans drained save the aquafaba for another recipe like fluffy vegan pancakes<br \/>\n2 ea large grated carrots<br \/>\nFresh orange slices for garnish<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Dressing: Add all dressing ingredients into a NutriBullet or Vitamin Mix style blender. Blend until smooth. Allow dressing to sit while you prepare the salad.<\/li>\n<li>Salad: Prep and chop all vegetables as specified in the ingredient list. Combine in a large mixing bowl and toss with dressing. Serve immediately and refrigerate leftovers.<\/li>\n<\/ol>\n<p><b>ActiveTips:<\/b><\/p>\n<ul>\n<li>Try cooking quinoa in a rice cooker \u2013 simply follow the same directions as for white rice.<\/li>\n<li>This recipe makes a big family-sized salad!
