This recipe is recommended by Active Personal Trainer &amp; Lifestyle Coach Leah Golden.<\/p>\n<p>Preparation time: 50 minutes<br \/>\nMakes 6-8 servings<br \/>\nSource:\u00a0<a href=\"http:\/\/www.cookusinterruptus.com\/rosemary-red-soup-4136-99.html\" target=\"_blank\" rel=\"noopener\">CookusInteruptus.com<\/a><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n3 medium carrots, chopped<br \/>\n1 beet, chopped (2 if small)<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n1 large onion, diced<br \/>\n2 tablespoons fresh chopped rosemary or 2 teaspoons dried<br \/>\n1 tablespoon fresh oregano or 1 teaspoon dried<br \/>\n1 cup dried red lentils<br \/>\n2 bay leaves<br \/>\n4\u20135 cups water or stock<br \/>\n2\u20133 tablespoons light miso<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Scrub and chop carrots and beet. Remove tops of beet if present. No need to peel unless vegetables are not organic.<\/li>\n<li>Heat oil in a 4-quart pot; add onion and saut\u00e9 until soft. Add carrots and beet; saut\u00e9 a few minutes more.<\/li>\n<li>Finely chop rosemary and oregano leaves, if using fresh herbs.<\/li>\n<li>Wash and drain lentils. Add herbs, lentils, bay leaves, and water or stock to saut\u00e9ed vegetables; bring to a boil. Lower heat and simmer 40 minutes.<\/li>\n<li>Remove bay leaves.
