Try adding other raw veggies to dip in the hummus, like carrots, cucumbers or sweet peppers.\u201d<\/em><\/p>\n<p>Source:\u00a0<a href=\"http:\/\/www.cuesa.org\/recipe\/root-vegetable-chips-roasted-carrot-hummus\" target=\"_blank\" rel=\"noopener\">www.cuesa.org<\/a><\/p>\n<p><strong>Ingredients<br \/>\n<\/strong>ROASTED CARROT HUMMUS<br \/>\n3 large carrots (about 12 ounces), roughly cut into 1-inch pieces<br \/>\nKosher salt<br \/>\n1\u00bd tablespoons extra-virgin olive oil<br \/>\n2 tablespoons tahini (sesame paste), well stirred<br \/>\n\u00bd teaspoon ground cumin<br \/>\n1 pinch crushed red chili pepper, or to taste<br \/>\n2-4 tablespoons water<\/p>\n<p>ROOT VEGETABLE CHIPS<br \/>\n1 turnip, washed well, unpeeled<br \/>\n1 parsnip<br \/>\n2 watermelon radishes, washed well, unpeeled<br \/>\n3 large red radishes, washed well, unpeeled<br \/>\n1 large carrot<br \/>\n1 red beet, peeled<br \/>\n1 yellow beet, peeled<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p><strong>To make the hummus:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 375\u00b0F. Place the carrots, salt, and olive oil on a large piece of foil or parchment paper. Toss the ingredients together.\u00a0Wrap them up and seal the edges so the steam doesn\u2019t escape.<\/li>\n<li>Roast in the oven until tender, 30-40 minutes.<\/li>\n<li>Open the paper and continue to roast for 5 minutes.<\/li>\n<li>Remove from the oven and cool completely. Process the carrots and the remaining ingredients, except for the water, in a food processor.<\/li>\n<li>Process the mixture until smooth, scraping down the sides of the bowl. Add water, if needed, to make a thick dip the consistency of hummus. Season with salt. This can be kept in the refrigerator for a few days.<\/li>\n<\/ol>\n<p><strong>To make the vegetable chips:<\/strong><\/p>\n<ol>\n<li>Using a mandolin, slice each raw vegetable into paper-thin slices, keeping the beets separate from the other ingredients.<\/li>\n<li>Place the turnip, parsnip, watermelon radishes, red radishes, and carrot in a large bowl of ice water for 15 minutes.
